Anthony’s Famous Spicy Shrimp/Chicken Recipe

My husband, Anthony makes one of my favorite meals. It also happens to be one of the most simple and fastest meals. He shares it all of the time on his Instagram and you are always asking for the recipe. I’ve nagged him for the past year about sharing it and he always tells me, “I don’t have a recipe and I don’t measure anything; that’s just how I cook.” Well, I made him nail down a recipe to this delicious lunch or dinner idea so that I could share it here with you.

Anthony's Famous Spicy Shrimp/Chicken

One pan lunch or dinner option that is quick to prepare

Servings 3

Ingredients
  

  • 1 lb chicken breasts or shrimp
  • 4 tbsp extra virgin olive oil
  • 1-2 sprinkles chili powder
  • 1/4 tsp water
  • 1-2 shakes crushed red pepper flakes
  • 3/4 tsp ground cumin
  • 1-2 sprinkles ground sea salt
  • 3 cups rice
  • 1 lemon juice, freshly squezed

Instructions
 

  • Cut chicken breasts into cubes or strips
  • Add olive oil to a skillet and heat over medium heat
  • After 1 minute of oil heating, add seasonings directly to the oil; stir frequently until the oil and seasonings begin to caramelize (about 1 minute)
  • Add chicken to skillet and increase heat to medium high
  • Cook until chicken is cooked through, stirring frequently; chicken should be crispy and completely coated
  • Serve with rice and top with a drizzle of lemon juice

Notes

the amount of seasoning used is highly dependent on your desired spice level; adjust to your preference
