HEALTHY CHICKEN + WAFFLES BREAKFAST RECIPE

I opened up my recipe suggestion box to you and the most requested recipe was: Healthy Chicken + Waffles. First things first, I wouldn’t make a healthier version of anything unless it tasted great; this breakfast recipe will satisfy everyone at the table. The recipe is not only health-ified but also high in protein, making it even more of a beneficial choice. Enjoy!


Healthy Chicken and Waffles Breakfast Recipe

A breakfast favorite turned healthy yet equally delicious

Ingredients
  

  • 2 large organic eggs
  • 1.5 cups panko breadcrumbs
  • 1.25 tsp dried parsley
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 lb chicken tenders
  • 1 package Kodiak flap jack + waffle mix (I also use Van's waffles)
  • sweet or spicy sausage (casings removed)

Instructions
 

  • Preheat oven to 375 degrees
  • In a pie plate, whisk together the eggs
  • In a separate large pie plate, whisk together panko, parsley, garlic powder, onion powder, paprika, salt and pepper
  • Fit a large, rimmed baking sheet with parchment
  • Dredge the chicken through the eggs and then into the panko mixture
  • Place the chicken on the prepared pan and bake for 20-25 mins, or until cooked through
  • Cook waffles according to package directions
  • Serve waffles topped with chicken and maple syrup
