Healthy Chicken and Waffles Breakfast Recipe
A breakfast favorite turned healthy yet equally delicious
Ingredients
- 2 large organic eggs
- 1.5 cups panko breadcrumbs
- 1.25 tsp dried parsley
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1 lb chicken tenders
- 1 package Kodiak flap jack + waffle mix (I also use Van's waffles)
- sweet or spicy sausage (casings removed)
Instructions
- Preheat oven to 375 degrees
- In a pie plate, whisk together the eggs
- In a separate large pie plate, whisk together panko, parsley, garlic powder, onion powder, paprika, salt and pepper
- Fit a large, rimmed baking sheet with parchment
- Dredge the chicken through the eggs and then into the panko mixture
- Place the chicken on the prepared pan and bake for 20-25 mins, or until cooked through
- Cook waffles according to package directions
- Serve waffles topped with chicken and maple syrup
