With the warmer weather lately, I’ve been craving meals that are a bit lighter and more refreshing… if that’s even a thing?! The other day I was craving a BLT and wanted to add a bit more protein to my meal so I grabbed a few hard boiled eggs to eat on the side. I then realized I only had the very end of a loaf of bread left. Ever since I can remember, I despise the end of loaves of bread.
I reworked my BLT with what I had on hand and it ended up coming together so well that I wanted to share this recipe. I know a lot of you eat lunch out of your house and those who may be home love quick options you can throw together, so here is a quick lunch idea for you!

-BLT LETTUCE WRAP RECIPE-
1/4 cup plain Greek yogurt
2 tsp lemon zest
1/2 tsp ground sea salt
1/2 tsp lemon pepper or freshly ground pepper
4 slices uncured, natural bacon
4 large Bibb lettuce leaves
1 cup halved cherry tomatoes
4 hardboiled eggs, halved or roughly chopped
1.In a small bowl, combine the yogurt with the lemon zest, salt and pepper. Refrigerate.
2. Place the bacon in a large frying ban over medium heat. Cook and drain on paper towels. Crumble.
3. Divide bacon, tomatoes and egg between lettuce cups.
4. Drizzle with yogurt mixture or serve on the side for dipping.
*Recipe makes 2 servings
