HEALTHY CROCKPOT TURKEY MEATBALL RECIPE

I’m always looking for a meal that requires a simple prep, yet allows me to cook in bulk. The crockpot is a great go-to for meals that meet that description. These turkey meatballs are so simple, taking under 10 minutes to prep! I love to enjoy them over a bowl of brown rice pasta or on a slice of brown rice bread to make a meatball sandwich. However you choose to serve, this is a meal to enjoy!

Ingredients:
-20oz (1.3 lb package) lean ground turkey
 -1/4 c brown rice breadcrumbs
-1 egg
-1/4 c parsley, oregano, basil (Italian seasoning blend or whichever seasonings you have/like)
-1 clove garlic, minced
-1/2 tsp sea salt
-1/4 c Parmesan cheese (optional)
-2 cups low sodium red sauce

Prep:
-Combine ground turkey, breadcrumbs, egg, seasoning, garlic, salt, and cheese in a large bowl
-Form loosely packed meatballs (~1/4 c sized)
-Place meatballs in crockpot
-Add sauce, ensuring the meatballs are completely or almost completely covered
-Cook on low 4-6 hours or until meatballs are cooked through

NOTE: If you do not have, cannot find, or want to make a substitute for the brown rice breadcrumbs, I suggest using almond flour, coconut flour, or oat flour (simply blend oats), using the same measurements.
