Because fajitas taste even better on a kabob…
I’m all about kabobs anytime of the year, but especially during summer! Are you kabob-crazy too?! If not, you certainly will be after you try out this recipe.
If there are two words that describe my cooking style it’s 1) simple and 2) delicious. Every meal I make must be big on taste but light on the number of ingredients used and complexity of the preparation. You’ll find this recipe is ridiculously delicious and so simple to make! 
What typically takes a fajita from healthy to not so healthy is the seasoning and sodium involved. With this recipe, the seasoning will tantalize your taste buds while keeping away the bloat by staying low in sodium.
2 boneless, skinless chicken breasts
1 red bell pepper
1 green bell pepper
1/2 red onion
1/4 tsp chili powder
1/4 tsp cumin
2 pinches sea salt
1 tbsp olive oil or coconut oil
Juice from 1/2 lime
*These ingredients make 2 servings
Begin by soaking the kabob skewers in water as a safety measure for cooking. 
Then, start dicing the boneless, skinless chicken breasts into bite sized pieces. Spread the diced chicken pieces out and shake over the top of them chili powder, cumin, and sea salt.
Cut the red pepper, green pepper and red onion into bite-sized chunks as well.
Remove the skewers from the water and start preparing your kabobs, placing a chicken breast slice, followed by a pepper or onion chunk then another chicken breast dice, and so on onto the skewer. 
If using a skillet, add in 1 tbsp of olive oil or coconut oil over medium-heat. Otherwise, fire up the grill! Then, carefully add the kabobs to the skillet or grill, rotating the kabobs quite regularly to ensure they’re cooking from all sides. Cooking time will vary from 12-15ish minute. 
While cooking, add in juice from the 1/2 lime as you turn the kabobs.
Chop up fresh cilantro and sprinkle it over the top of your cooked kabobs for added flavor!
