I can recall getting off the school bus and opening the door to the smell of my mom baking an afternoon snack in the kitchen – such fond memories. Unlike my mother, I lack patience and time with food preparation…hence, the microwave muffin. This delicious single serving, healthy muffin tastes like my moms banana bread, but takes 1/10th of the time AND has a healthy twist.
Ingredients:
-1 mashed banana
-1 scoop protein (vanilla)
-1 egg
-1/4 c almond flour, coconut flour, oat flour (blended oats), oatmeal, or crushed rice cakes
Prep:
-Mash banana in mug
-Add in all other ingredients, stirring in the chocolate chips last
-Microwave for 1.5-2 minutes
*NOTE: carb source can vary, depending upon your dietary preference (ie: low carb, paleo, gluten free, etc.) – I’ve tried all versions and they taste near identical
*If center of muffin in a bit mushy, microwave in additional 15s increments (personally, I think it tastes best a bit mushy)
