We’ve got Dr. Seuss vibes goin’ on today. Well, they’re really not green eggs, but there are green veggies and there is ham involved. Breakfast casseroles are a favorite in my home. Anthony and I have big appetites for breakfast, but neither of us enjoy cooking first thing in the morning, so it’s likely a simple smoothie or an option we can enjoy with little to no prep. Like this, re-heatable casserole!
8 eggs
1 cup unflavored almond milk
1/2 tsp sea salt
1/2 tsp black pepper
1 tsp paprike
1 cup plain, nonfat Greek yogurt
1/2 cup shredded monterey jack cheese (optional)
2 cups defrosted frozen broccoli florets
1 + 1/2 cup shredded frozen potatoes
1/2 cup diced red onion
1/2 cup diced onion
1/2 cup diced deli ham
INSTRUCTIONS
Preheat oven to 375 degrees F
Whisk the eggs together in a large bowl until frothy; add milk, salt, pepper, paprika, yogurt and cheese (optional) and stir well
Use an olive oil or nonstick spray on a 9×9 baking dish
Layer the broccoli, potatoes, onion and ham in the bottom of the baking pan
Pour the egg mixture over the vegetables and ham
Bake for 1 hour, or until a toothpick inserted into the center comes out clean; let sit for 10 minutes before serving
