FREEZER DUMP BEEF STEW HEALTHY RECIPE

I just officially joined the simple dinner world also known as freezer dump meals. What took me so long? These are amazing. If you’re not familiar, freezer dump meals are those that you can prepare, pour in a large plastic bag, freeze and then dump into a slow cooker whenever you’re ready to enjoy.

A beef stew/pot roast type of meal is Anthony’s absolute favorite. You’ve probably seen him share it on his Instagram when I make it, which has been quite often lately. The warm meal is great for these cooler temps and there is something so satisfying and filling about it.

With this pot roast recipe, it’s even easier to prepare. Literally, freeze and dump! I hope you and your family enjoy it as much as we do.

This meal brought me back to my Wisconsin roots. I grew up in Mequon which is just north of Milwaukee and went to college in De Pere: a city outside of Green Bay; it amazes me how many of you are from those areas! 
My mom made this meal all the time during Wisconsin winters. As I was eating this, I was reminiscing on those days. 

I currently live in a north Houston suburb and as much as I love (like love!) warmer weather, I miss cool temps/snow around the holidays. Unfortunately in Wisconsin, it can snow through spring so I don’t miss it enough to move back but the cold weather is just part of the holiday season, you know?!
For those of you who live in the south, do you do anything special to make it feel more like the holidays or do you just get used to it? Feel free to comment on this post if you have any suggestions.

Two things about me: 1) I’m obsessed with Christmas – I think I was an elf in a past life lol and 2) traditions are so important to me. Now that we have a child, I would love to do an annual winter trip somewhere with snow. It’s bizarre to me that my kids won’t experience snow is unless I take them to places with snow. 
Do any of you do airbnb? I would love to rent a home in Colorado with my family and my husband’s family a bit before or after Christmas to take in the winter weather. Maybe we will start that next year! Okay, that’s all for  my cold weather thoughts haha.

Freezer Dump Beef Stew

Course Entrees, Main Dish

Ingredients
  

  • 4 large red potatoes, cubed & blanched
  • 1 lb cubed stew meat
  • 1 1/2 cups chicken of beef broth
  • 1/2 bag baby carrots, blanched
  • 1 1/2 tbsp olive oil
  • 1/2 tsp oregano
  • 1/2 tsp dried rosemary
  • 1/2 tsp ground sea salt
  • 1/2 tsp freshly ground black pepper

Instructions
 

Prep

  • Place potatoes in the bottom of large, resealable bag.
  • Add remaining ingredients on top of potatoes.
  • Freeze.

Cooking

  • The morning you want the meal, pour the bag of ingredients into a slow cooker.
  • Cover and cook on low heat for 6-8 hours or on high for 4 hours.
