10 MINUTE HEALTHY BREAKFAST RECIPE: FRIED EGG ON AVOCADO TOAST

Ingredients:
-2 eggs
-1/4 avocado, mashed
-2 slices of bread (Ezekiel/sprouted or brown rice is recommended)
-2 slices of uncured, no nitrate added turkey bacon (Trader Joes is my favorite brand)
-Seasoning: salt & pepper to taste)

Prep:
One the stove…
-Heat skillet & spray with olive oil nonstick spray
-Cook turkey bacon on skillet, flipping until cooked through
-Fry egg & flip (~1 minute each side)

 While turkey bacon & egg are cooking…
-Toast bread
-Mash avocado & spread over toasted bread
-Add seasoning over the mashed avocado

When the bacon & eggs are cooked…
-Lay turkey bacon strips over mashed avocado
-Top with fried egg

    This recipe is amazing! I tried it last Saturday morning for breakfast and absolutely loved the taste. The avocado really adds for a healthy alternative to a spread such as mayonnaise or butter. Thanks Lauren!
