My least and most favorite thing about a blog is that everything lives forever. I love this because you can always refer back to things, but I dislike the fact that old (but good) posts are difficult to dig up on a blog. I wanted to round up a few recipes you may have forgotten about that would be yummy to make this weekend.
WEEKEND RECIPES
On the weekend, I have a little bit more time to cook. I enjoy that I can actually cook a breakfast instead of thinking of a meal that I can make in less than 5 minutes haha. I also like to make a few meals that last throughout the week as well as enjoying on the spot, so I wanted to share some I thought you would enjoy this weekend and into the week ahead.
For a Weekend Breakfast: Strawberry Pancake Muffins
Better than syrup, add a dollop of greek yogurt on top of these muffins… I swear it tastes like a cupcake in the morning! These are perfect for a family!
Cooking for Family or Friends: Super Simple Turkey Chili
Chili somehow gets better with each reheat. I love this meal just as much 3 days later as I do the first, fresh serving. Also, you can omit the meat and add more veggies if you prefer a meatless meal.
To Make For the Week: Chocolate Zucchini Muffins
Oh baby, these are so good! They make a great addition to any meal throughout the week if you make a batch over the weekend. I love these with a protein shake as a quick meal during the day.
Seasonal Treat: Healthy McDonalds Shamrock Shake Alternative
With shamrock shake season upon us, a healthier alternative may be a better option for those of us who could eat one every day lol. While there is no true substitute, this smoothie is pretty stinkin’ close!
