This recipe is perfect for the expecting mama and/or new mom who has little time to cook but a big appetite. It’s just a few minutes of hands on prep, pop in the crockpot and then enjoy. I also love that this recipe makes lots of servings because it reheats well for meals that last throughout the week (key for new moms!). Plus, it’s husband approved!
As you know, I’m releasing “Mom Plans” this spring: prenatal/postpartum fitness plans and a cookbook intended for the expecting mom and new mom.
When creating these recipes, I focused on a few key aspects:
QUICK PREP TIME: when you’re a new mom, there are a million more things to think about and making meals certainly isn’t a priority. Yet, it’s important. It’s important for you the mom- to feel full/energize to take care of yourself and the baby, and it’s important if you’re breastfeeding in establishing and maintaining a strong milk supply. So these recipes all had to be ones that required as little time as possible to prep!
MAKES LEFTOVERS + REHEATS WELL: I also focused on creating recipes that made many servings. I was all about that casserole life as a new mom. I would eat one fresh meal and put the rest in the refrigerator to reheat for the next several days.
FEEDS THE FAMILY: during this time, you’re so focused on the one, beautiful new life you just brought into the world. Still, you likely have other family members who need to eat whether that is your husband or other kids. The recipes I create for the Mom Cookbook and here on the mom blog are those that are intended for your entire family too!
SATISFIES CRAVINGS: I remained health-conscious throughout my pregnancy and after but I looked for foods that satisfied my cravings. I would make meals that were slightly healthier versions of all my favorite things, which is what you’ll find with my mom meals.
Crockpot Taco Chili Recipe
Ingredients
- 1 medium onion, diced
- 1 red, orange, or yellow bell pepper diced
- 1 1.25oz packed reduced sodium taco seasoning
- 2 tbsp tomato paste
- 3 cans white chili beans (not drained)
- 1 can diced tomatoes with chilies (not drained)
- 1.5 lb shredded cooked rotisserie chicken
Instructions
- Place the onion, bell pepper, taco seasoning, tomato paste, beans, tomatoes, and chicken in a slow cooker.
- Cook on low for 4 hours.
