Healthy Chocolate Quinoa Brownies

Ingredients:-1/2 cup quinoa
-1/2 cup stevia
-1/2 cup unsweetened cocoa powder
-1/4 cup coconut or almond milk
-3 egg whites
-1 tsp vanilla
-1 tsp baking powder

Prep:
-Preheat oven to 350 degrees
-Bring water to a boil and add in quinoa; let simmer & stand for up to 20 min (follow directions as instructed for cooking your particular quinoa)
-Allow quinoa to cool to room temperature
-Mix all ingredients (cooled quinoa, stevia, cocoa powder, coconut/almond milk, egg white, vanilla and baking powder) into a food processor (I used a magic bullet) until smooth – approx. 1 min
-Pour mixture into an 8in x 8in pan
-Bake in oven approx 30 minutes or until cooked in center

Optional add ins and toppings:
-almonds, walnuts, pecans, etc
-unsweetened coconut
-dark chocolate chips
-powdered stevia

I am not the biggest fan of chocolate & brownies but I made these for my boyfriend for sweetest day – he LOVED them; I added dark chocolate chips to the top of his; in another batch I added coconut both to the top and in the mixture. Both were very good and I actually cut up a 1in x 1 in section and added it on top of my Healthy Ezekiel French Toast (under recipes). Feel free to add whatever as long as it’s CLEAN 🙂

    Are you supposed to use 1/2 cup uncooked or cooked quinoa?

    Okay, I guess I need to clarify. I know the quinoa is supposed to be cooked, but do we start with a 1/2 cup uncooked quinoa and use the full amount once cooked? Or do I use a 1/2 cup cooked quinoa? Thanks!
