…I’ve got the p-e-r-f-e-c-t breakfast addition for you!
Who isn’t all about a quick and easy breakfast recipe?! This healthy breakfast cookie is ideal for those of you who are looking for a breakfast you can eat on the go or for when you’re short on cooking prep time in the morning!
Cookies? For breakfast?? You bet!
This breakfast cookie will fill the “carbohydrate section” of the Eat You Way Lean food plate, so I love to enjoy them with a protein shake ((if I’m flying out the door)) or eggs ((if I have a little bit more time)).
1 ripe banana
1 cup uncooked oats
1/2 cup unsweetened applesauce
1/2 tsp cinnamon
1/2 tsp vanilla extract
Optional add ins: chocolate chips, raisins, nuts
Preheat the oven to 350 degrees F
In a bowl, mash a ripe banana with a form and add in all remaining ingredients. Mix well. Now, you can add in an additional items (i.e.: chocolate chips, raisins, nuts, etc.)
Line a baking sheet with parchment paper and spoon out cookie dough onto the baking sheet. Press down into circular, cookie shapes.
Bake for 20-25 minutes or until cookies start to golden. After a few minutes, remove the cookies from the baking sheet and transfer to a cooling rack. The cookies will be soft, but will firm up as they cool down.
Store in an airtight container. These cookies last well for up to about 1 week!
