Who doesn’t love a quesadilla?! This recipe is a delicious twist on the classic Mexican-inspired dish. The barbeque/avocado combination is mouth watering, and the lack of grease makes this meal healthy and light while tasty and satisfying!
-2 small or 1 large tortilla(s) (Healthy choice tortillas include brown rice, Ezekiel and corn tortillas)
-3 oz chicken
-1 tbsp barbeque sauce
-1/4 avocado
-1/4 c fat free shredded mozzarella cheese (dairy free options work as well)
-Grill 3oz chicken (~1 chicken breast)
-Spray a skillet with olive oil or coconut oil spray (olive oil or coconut oil will work as well)
-Shred chicken with a fork
-In a bowl, combine shredded chicken & BBQ sauce, stir
-Cut avocado into small chunks
-Place tortilla in skillet
-Place BBQ chicken on 1/2 large tortilla or on entire small tortilla
-Add avocado chunks and shredded cheese
-Fold large tortilla in half or lay other small tortilla on top
-Flip quesadilla to cook other side

    I bought your book and I am really excited about following your workouts but I am worried if I am jumping the gun. I have 30 lbs to lose and from what I have read it sounds like I have to get the weight off before I try and tone. Do you believe this philosophy or do you think I also need to increase my cardio along with following your routines in order to meet my goals in the long term. Thanks for your input.
