Chicken Pesto Panini Healthy + Quick Recipe

When you make it 4x in one week… you know it’s a good recipe! This Chicken Pesto Panini Sandwich recipe is coming straight from the Weekly Meal Menus for the Fall Challenge. This recipe is SO easy to make. Seriously takes me 8 minutes in total: prep time and cook time. There are very few ingredients and it’s one of those meals that you eat and actually feel full and satisfied!

Chicken Pesto Panini

a quick and simple lunch or dinner idea
Prep Time 3 minutes
Cook Time 5 minutes
Total Time 8 minutes
Servings 2 serving


  • 2 slices bread (ex: Ezekiel or Dave's Killer Bread)
  • 2 slices fresh mozzarella cheese
  • 2 slices tomatoes
  • 1/4 cup shredded rotisserie/cooked chicken shredded
  • 1 1/2 tbsp basil pesto
  • 2 slices fresh basil


  • Heat a panini maker.
  • Divide ingredients between bread then grill until cheese is melted.
  • Slice in half and serve.
