When you make it 4x in one week… you know it’s a good recipe! This Chicken Pesto Panini Sandwich recipe is coming straight from the Weekly Meal Menus for the Fall Challenge. As you know, when you’re a meal plan member, you receive all sorts of extra freebies like recipes direct to your inbox each week of the challenge… this is one of my favorites so far. It was too good not to share on the blog!
This recipe is SO easy to make. Seriously takes me 8 minutes in total: prep time and cook time. There are very few ingredients and it’s one of those meals that you eat and actually feel full and satisfied!

I think it’s a great new look. In my opinion, it’s very easy to read and I love you can click the print button to download it to your phone and/or print it out.

Chicken Pesto Panini
Ingredients
- 2 slices bread (ex: Ezekiel or Dave's Killer Bread)
- 2 slices fresh mozzarella cheese
- 2 slices tomatoes
- 1/4 cup shredded rotisserie/cooked chicken shredded
- 1 1/2 tbsp basil pesto
- 2 slices fresh basil
Instructions
- Heat a panini maker.
- Divide ingredients between bread then grill until cheese is melted.
- Slice in half and serve.
