If there’s one thing better than French toast, it’s a French toast bake that can feed a group of family or friends (orrr make for extra servings for yourself lol). This is the perfect weekend breakfast meal. I normally want to drizzle my French toast with syrup, but the warm berries are such a nice switch up.
INGREDIENTS8 eggs
2 1/2 cups unsweetened almond milk
1 tbsp vanilla
1 tsp powdered stevia (or sugar)
1 load Ezekiel bread, cut into cubes
1 cup fresh blueberries, mashed
2 tbsp honey
Greek yogurt
INSTRUCTIONS
Grease a 9×13 metal baking pan
Whisk the eggs and stir in the milk, vanilla and stevia
Place bread cubes in the prepared pan and pour egg mixture over it
Cover with plastic wrap and refrigerate for at least 3 hours
Preheat oven to 350 degrees
Bake for 45 minutes or until golden brown
In a small saucepan, warm blueberries and honey together
Cut French Toast bake into 8 equal squares
Top with a dollop of yogurt and drizzle with berry mixture
