Healthy Black Bean Brownie Muffins

Black beans in brownies? Yes, I too was apprehensive when I first saw versions of this recipe floating around. However, black beans are a great carbohydrate. Black beans are packed with fiber, protein, antioxidants, and several other vitamins and minerals. Due to the protein content, black beans are a great addition to a vegetarian diet as well! For those of you who are still apprehensive, I encourage you to just make one batch! The consistency is like that of a brownie and you would never guess it’s a healthy food option!
Ingredients:
-1 can black beans (drained & washed)
-1/3cup flour (whole wheat flour, oat flour, coconut flour, etc)
-1 tsp vanilla extract
-15 drops vanilla stevia
-1/4 cup honey or sugar substitute (ie: powdered stevia)
-2 tbsp almond butter/peanut butter
-1 tsp baking powder
-3 tbsp unsweetened cocoa powder
-Dark chocolate chips (optional)
-Nuts (optional)

Prep:
-Preheat oven to 350 degrees
-Combine all ingredients (except chocolate chips & nuts) in a food processor (the consistency of the batter will be very thick)
-Line a muffin tin with liners or coat with olive oil spray
-Spoon around 2-3 tbsp of batter into each tin (my batch made around 9 muffins)
-Sprinkle a few dark chocolate chips and/or nuts on top
-Bake 20-30minutes or until muffins are cooked through
