I try to emphasize the importance of beginning your day with a nutritious breakfast. Far too many women skip their breakfast meal completely, but it is arguably the most important meal of the day. You body has been in starvation mode/without food for hours throughout the night and is in desperate need of health calories, nutrients, and protein! Also, your breakfast meal will kick start your metabolism for the day. Still, many of us are short on time when it comes to cooking a healthy meal. These egg muffins are the perfect option as they can be refrigerated and heated up for a great grab-and-go type breakfast!
Ingredients:
-Turkey bacon
-Turkey sausage (optional)
-Eggs (egg whites)
-Veggie add ins (I do mushroom, spinach, green onion, peppers)
-Low fat cheese (optional)
-Muffin tin

Prep:
-Preheat oven to 350 degrees
-Begin by lining the muffin tin with the turkey bacon so that is forms a circle
-Add in sauteed turkey sausage & vegetable mix ins
-Fill muffin tin 3/4 of the way with egg whites/eggs
-Add a sprinkle of cheese
-Bake 25-30 minutes
*By switching up the vegetable add-ins, this meal can be changed in taste to keep things interesting
*These egg muffins hold their shape quite well & pop out of the muffin tin very easily
Line tin with turkey bacon
Add mix-ins
Fill 3/4 way with egg whites
Finished product
