If you follow me on snapchat, you know that I’ve been obsessed with this meal lately! And I know you ((and your family)) soon will be too!
When I create healthy recipes, I go for ones that are not only nutritious and delicious, but also hearty, giving that comfortably full feeling and keeping cravings at bay in between meals!
This recipe is one that works great with chicken that you’ve already meal prepped. So, I would suggest baking a few boneless, skinless chicken breasts and storing them in the refrigerator, making this a quick 10 minute meal!
Ingredients:1 boneless, skinless chicken breast
1 natural pita pocket or flat bread
2 strips of turkey bacon
1 tbsp red onions, chopped
1.5 tbsp natural BBQ sauce
2 tbsp shredded mozzarella cheese
Instructions:
Preheat the oven to 425 degrees F and bake the chicken on a baking sheet for ~20 minutes or until cooked through. You may also use any already cooked chicken that you’ve made prior.
Shred the chicken with a fork ((this is easiest to do when the chicken is cool)) or cut into very thin 1 inch strips.
Cut the pita pocket open, so you have two halves. Spread 1/2 tablespoon of BBQ sauce on each pita pocket half.
Cook the turkey bacon and finely chop the cooked bacon as well as the red onion. Sprinkle both the bacon and onion pieces evenly across both pitas.
In a small bowl, combine the shredded chicken and the final 1/2 tablespoon of BBQ and toss until all the chicken is coated. Then, even spread the chicken between the two pita slices.
Finish by sprinkling 1 tablespoon of shredded mozzarella cheese over each pita.
Bake for ~8 minutes or to desired crispiness. I hope you enjoy this meal as much as I do!
